How to make Red Panda Cake Roll

1. Cut the wax paper into the size of the cake pan, draw a panda pattern on one side with a pencil, then turn the paper over and place it on the baking pan so that the pattern can show through and will not stick to the batter.

2. Mix the egg yolk and 30 grams of sugar, beat until the sugar melts and the egg yolk becomes lighter in color, then add salad oil and water twice and stir evenly (you can add water or salad oil first)

3. Finally, sift the low-gluten flour into the liquid

4. Stir evenly into batter and preheat the oven to 180 degrees

6. Take out a large spoonful of batter (equivalent to 10-15 grams), add brown pigment or cocoa powder, and stir evenly to make brown batter.

7. Add a tablespoon of the egg whites you just beat and mix well to form a brown batter.

8. Put the brown batter into a piping bag and dot the panda’s eyes, ears and mouth in brown according to the pattern on the baking paper.

9. Then immediately put the baking tray into the middle layer of the preheated oven, bake for 10 seconds to set (note not 10 minutes) and take it out immediately

10. Scoop out two tablespoons of batter (equivalent to 25-30 grams) and put it into a small bowl. Add two tablespoons of beaten egg whites and mix well to form a yellow batter.

11. Put the yellow batter into a piping bag and paint the panda’s face according to the pattern on the baking paper.

12. Then immediately put it in the middle layer of the oven and bake for 15 seconds to set (note not 15 minutes) and take it out immediately

13. Add matcha powder and 1 drop of green food coloring to the remaining egg yolk batter and mix well to make a green batter.

14. Whip 3 egg whites and 35g sugar until 80% foamy, then mix with the green matcha batter.

15. Pour the dough onto the baking paper with the panda pattern, spread it evenly, tap it twice, and place it in the middle layer of the oven.

16. Bake for about 10 minutes until the surface is no longer sticky.

17. After taking it out, let it dry slightly until the surface of the cake is relatively dry

18. Then put the cake slice and the paper upside down on another piece of wax paper, gently peel off the top wax paper, and the panda pattern will be clearly visible. Let it dry until it is about the same temperature as your hand.

19. Apply a layer of whipped cream on the green surface of the cake.

21. Gently roll up the cake slice from one end

22. When rolling, lift the wax paper and apply force at the same time. This way, the force will be more even and the cake roll will not be cracked by your fingers accidentally.

23. After rolling, wrap it tightly with wax paper, put it in the refrigerator for 20 minutes until it is set, and then slice it.
