How to make spicy brain flower

Preparation: Tear off the surface film of the brain, chop the ginger, onion and garlic, and mince the fermented black beans.

Place ginger and garlic in a small pot, put in the brain, then pour in cooking oil to cover two-thirds of the brain, and turn on the heat to cook.

Dissolve salt in water to make brine, add appropriate amount of spicy sauce and oyster sauce to the brine, and stir evenly (add the right amount, otherwise it will be too salty. But if it is too salty, it’s okay, you can use sugar to save it).

After the brain is boiled, add the salt water mixture and chopped black beans. After boiling again, add chili powder, five-spice powder, pepper oil, sesame oil, and chopped green onions. Finally, cook for two minutes and turn off the heat.

Materials

Pig brain 4 pieces

Chop half a head of garlic into garlic paste and divide into two portions

1 head celery, diced

3 corianders, chopped

3 spoons bean paste

10 peppercorns

How to make spicy brain flower

Wash the brain and use a toothpick to remove the blood and film wrapped around it.

Heat oil in a pan and sauté peppercorns and 1/2 minced garlic until fragrant. Add bean paste and stir-fry until red oil comes out. Add a bowl of water and bring to a boil.

Add the brain and cook for 8-10 minutes

Take out the brains, heat another pan with oil to sauté diced celery and minced garlic, pour the oil over the brains, sprinkle with coriander, and the aroma will fill the air.

Main ingredients: 500 grams of pig brain

Seasoning: 30g bean paste, 8g pepper powder, 3g curry, 30g scallion, 10g starch (corn), 5g MSG, 5g salt, 20g garlic, 50g vegetable oil, as needed

Spicy brain flower method:

1. Remove the blood tendons from the pig brain, wash it, put it into a boiling water pot to remove the blood, rinse it with clean water and drain it;

2. Chop the Pixian bean paste into puree with a knife;

3. Wash the scallion and cut into 3 cm long segments;

4. Put starch in a bowl and add water to make wet starch for later use;

5. Chop the garlic into puree;

6. Put the pot on the fire, add vegetable oil and heat it to 50%, add Pixian bean paste and garlic, add broth when it is fragrant, pour in pig brain, add all seasonings, thicken with wet starch, add MSG, remove from the pot and place on a plate, sprinkle with pepper powder and it is done.

Seasoning: 10g salt, 15g soy sauce, 5g vinegar, 2g MSG, 15g cooking wine, 5g sesame oil, 5g ginger, 5g green onion, 100g salad oil

Preparation method

1. Wash the brain and cook it in boiling water with salt until it is cooked through; add eggs and soybean powder

2. Drain the water and cut into 2 cm square pieces;

3. Mix eggs and soybean powder into a bowl and add the brain to coat evenly;

3. 4. Fry the brain in hot oil until it turns golden brown and crispy, then remove from the pan and place on a plate. In another pan, add the sweet and sour sauce and pour it over the brain.

Tips for making

1. When thickening the sauce, the consistency should be controlled well, not too thick or too thin;

2. Put the brain flowers in the pot separately or separate them by hand to prevent them from sticking and affecting the shaping;

3. This product has a frying process, so about 500 grams of salad oil is required.
