1. The ingredients in the picture are for making Dutch sauce. If you don’t have apple cider vinegar, you can use white vinegar instead.

2. Beat 2 egg yolks and add 5ml apple cider vinegar

3. Boil a pot of water and beat the eggs in a steam-proof bowl until they turn white.

4. Beat until the color turns white, the liquid expands and becomes fine, and there are no coarse bubbles

5. The butter can be melted in water or in a microwave at low temperature. Use a fine sieve to filter out the foam and unmelted particles.

6. Slowly add the melted butter to the beaten egg liquid. Be sure to add it little by little, and stir thoroughly with a whisk every time you add a little. Avoid overcooking the eggs. Add salt, pepper and lemon juice and mix well.
