How to make spicy and sour pork rind

When we turn on the TV and see food programs, I think everyone can’t resist the temptation. 1. Ingredients: processed pork skin, green pepper, red pepper, carrot, onion, ginger, garlic and Sichuan pepper

2. Rinse the pork skin, put it into the pot, add cooking wine and a few slices of ginger, cook for two minutes after the water boils, remove it and rinse off the foam.

3. Scrape the fat off the inside of each piece of pig skin. Press the leftmost side of the skin with your left hand, and use your right hand to scrape back and forth from left to right until all the fat is scraped off. Scrape the surface of the pig skin several times in the same way. If the pig hair is not plucked cleanly, use tweezers or eyebrow tweezers to remove it.

4. Scrape off the fat, remove the pig hair and rinse it clean. Put water in a pot, add the processed pork skin, cooking wine and ginger slices and cook for seven or eight minutes, then remove and cut into shreds. (I forgot to take a picture, so I’ll use the picture from step 2)

5. Heat oil in a pan and sauté scallions, ginger, garlic, dried chilies and Sichuan peppercorns.

6. Add shredded red pepper, carrot and green pepper and stir-fry for a while, then add shredded pork skin and continue stir-frying.

7. Pour in a little cooking wine.

8. A little soy sauce.

9. Add an appropriate amount of vinegar, the amount can be appropriately more.

10. Add a few drops of light soy sauce.

11. Add a tablespoon of sugar. (The amount can be adjusted according to your taste.)

12. Add a spoonful of salt.

13. Stir-fry evenly, add a little boiling water, cover and simmer for one minute, then stir-fry until the water is almost absorbed and serve.
