Production process

1. Spray the tofu skin (thousand sheets) with clean water until soft;

3. Put the wok on high heat, add water, put in the tofu skin rolls, cook for 50 minutes, take out, and after cooling, untie the thin hemp rope, remove the cloth, and cut into 1.5 cm thick slices;

4. Return the wok to high heat, add peanut oil and heat until 80% hot, add the tofu skin slices and fry for half a minute, then pour into a colander to drain the oil;

5. Leave some oil in the wok, put it back on high heat, add red yeast rice and ginger slices and stir-fry, add some water, then put in the tofu skin slices, add white soy sauce, sugar and MSG, stir-fry for a few times and it is done.

Ingredients: Dried tofu

Four pounds

Ingredients: Soda

Flour, alkali, aniseed, pepper, cinnamon, bay leaf, chili, soybean oil, etc.

Cut the dried tofu into three pieces, about an inch wide, in strips. Bring water to a boil, add the loose dried tofu, and at the same time add peanut-sized pieces of baking soda and boil for 7-10 minutes.

Remove from water and drain. Wrap it in gauze while it’s still hot. Place the bag in a square drain container and compact it for 15 minutes.

Take out and cut into 2 cm thick slices, about 7 cm square, and fry until formed.

Bring water to a boil, add star anise, soy sauce, bay leaves, cinnamon, and chili peppers. It is best to add chicken soup. Put the fried tofu in and take it out when the soup is almost dry. After it cools down, you can eat it cold or stir-fry it.
