Cold pork trotter slices

Pig's feet are the pig's trotters we usually eat, also called pig's hands. The front trotters have more meat but less bones, while the hind trotters have less meat but slightly more bones. According to traditional Chinese medicine, pig's trotters are rich in collagen, so eating them can help beautify and nourish the skin. Moreover, pig's trotters can help to promote blood circulation and treat milk accumulation caused by insufficient qi and blood after childbirth. There are many delicious ways to cook pig's trotters, and cooking them cold is one of the simple and delicious home-cooked dishes.

1. Method 1

Ingredients: 600 grams of pig's trotter, 20 grams of green onion, 15 grams of minced garlic, 10 white peppercorns, 10 grams of scallion, 3 slices of ginger, a little rice wine, some cotton thread, 1 tablespoon of oyster sauce, 2 tablespoons of soy sauce paste, 1 teaspoon of rice wine, 1 teaspoon of plum vinegar, 1 teaspoon of sugar, 1 teaspoon of sesame oil, 1/2 tablespoon of chili sauce.

1. Wash the pig's trotter, cut a knife in the middle, remove the bones, blanch the pig's trotter in boiling water for about 5 minutes, remove and rinse; cut the green garlic into shreds and set aside.

2. Roll the pork trotters prepared in step 1 into strips and tie them into strips with cotton thread.

3. Take a pot of water, add scallion, ginger, rice wine, and white peppercorns and bring to a boil. Add the pork trotter strips from step 2 and simmer over low heat for about 1 hour. Remove from the pot and place in ice water to cool, then cut into slices.

4. After mixing all the seasonings with the minced garlic, you can use it as a dipping sauce and eat it with the shredded green garlic and pork trotter slices prepared in method 1.

2. Method 2
