1. Prepare fresh fish, shallots, ginger, red pepper and Lee Kum Kee steamed fish soy sauce.

2.1 Cut ginger, shallot and red pepper into shreds respectively. (Keep 1 scallion aside)

3.2 Clean the fish, wipe it dry with kitchen paper, then make cuts on both sides (this is to make the fish easier to taste), evenly apply a tablespoon of cooking wine, then evenly apply a teaspoon of salt, marinate for a while to remove the fishy smell and absorb the flavor. (Apply cooking wine first, then salt. If you apply salt first, the salt will be washed away when you apply cooking wine later.)

4. Place about 1/3 of the scallion and ginger shreds on the bottom of the plate, then put the fish on it, and then place the scallion and ginger shreds on the fish body and belly.

5. Steam in boiling water for about 8 minutes, turn off the heat, and simmer for about 2-3 minutes.

6. Take out the steamed fish, remove the scallions and ginger from the plate, cut the reserved scallions into thin strips, and place them on the fish together with the red pepper strips. First, evenly pour Lee Kum Kee steamed fish soy sauce on it, and then pour the smoking hot oil on it.
