How to make Xinjiang Latiaozi

1. Prepare a Bear brand dough mixer and place it on a flat surface.

2. Two small bowls of high-gluten flour (special type flour).

3. Add one tablespoon of salt to a bowl of cold water.

4. Pour two bowls of flour into the dough bucket.

5. Slowly pour in the prepared salt water and set the dough mixer's kneading keypad to 30 minutes. The dough mixer will then start working automatically. After working for 5 minutes, add a little water again, and after working for 10 minutes, add water for the third time. The dough mixer works automatically to knead the dough.

6. This is the result after the dough mixer worked for half an hour.

7. Apply oil on the chopping board, then place the kneaded dough on the chopping board and set aside.

8. Press the dough into strips as shown in the picture.

9. Knead the dough into round strips on the chopping board.

10. Spread some oil on the bottom of the plate.

11. Roll up the dough into strips and apply rapeseed oil on it, spreading it evenly.

12. When the plate is full, you can add another layer as shown in the picture, but still apply oil to prevent sticking. Then wrap it in plastic wrap and let it rest for 15 minutes.

13. Start pulling the noodles as shown in the picture.

14. If the noodles you stretch once are not thin enough, stretch them again.

15. Put the noodles on your hand, add the boiling water into the pot, add the noodles and boil, then add a second boil of water until cooked.
