Shredded Potatoes

1. Peel the potatoes and cut them into strips. Put them in a basket, wash them with water and drain them.

2. Cut the green pepper, yellow pepper and red pepper into strips and set aside

3. Rinse the dried chili peppers with water and squeeze them dry.

4. Heat the oil in the pan, add the peppercorns and fry until fragrant, then remove the peppercorns and discard them, then add the dried chilies.

5. Add the bell pepper shreds and stir-fry for a few times, then pour in the drained potato shreds and stir-fry over high heat for 2 minutes. Add a little salt, sugar, vinegar and MSG and stir well.

Spicy and Sour Potato Shreds

1. Peel the potatoes, cut into thin strips, and soak them in water to wash away the starch. This will prevent them from turning black and keep them white, tender, and crisp when stir-frying. Remove from the potatoes and drain before frying.

2. Remove the seeds and stems of green and red peppers, cut into thin strips, and cut the dried peppers into strips.

3. Put the wok on the fire, add peanut oil and heat it up, add the chopped green onion and stir-fry, add the dried chili and stir-fry until fragrant, then add the shredded green and red pepper and potato, stir-fry until 80% cooked, add salt and MSG to taste, then drizzle with sesame oil and balsamic vinegar, and stir-fry until cooked.

Homemade Shredded Potatoes

1. Cut the beef into shreds, peel and cut the potatoes into shreds, and chop the onion, ginger and garlic.

2. Heat the pan, pour in oil, add chopped onion, ginger and garlic into the pan and stir-fry for a few times, then add shredded meat, soy sauce and vinegar and stir-fry.

3. After the shredded meat is cooked, add the shredded potatoes and stir-fry over high heat for about 5 minutes. Add salt and MSG, and then vinegar according to personal taste. Stir-fry a few times and it is ready to serve.

Warm reminder: After adding the shredded potatoes, you can freely control the stir-frying time. If you stir-fry for a short time, the taste will be crispy, and if you stir-fry for a long time, the potatoes will become soft. It depends on your personal taste. If you like softer texture, you can cook it for a longer time, or add a little water after turning off the heat, cover it and simmer for a few minutes. The meat is used to add flavor, so don't put too much in, otherwise it will affect the taste and texture.
