Mashed Potato French Fries

French fries can be said to be a snack suitable for both young and old. Many times, we buy them in fast food restaurants, but if you want to eat delicious French fries, you can also make them yourself. Today we will introduce to you the method of making mashed potato fries. Compared with simple French fries, the taste is richer and more layered, and more suitable for children. And it’s easy to cook too.

French fries are deep-fried potato chips. The method is to pour ten liang of raw oil into the pot, bring it to a boil, dip the French fries in the batter, and put them into the boiling oil. Do not fry them on too strong a fire to avoid them burning. When the French fries are fried until golden brown, you can pick them all up and eat them. You can dip them in tomato juice or pepper salt, which is sweet and delicious.

French fries can be eaten with sesame pepper salt or ketchup, or they have a unique flavor when eaten alone. Sesame and pepper salt is easy to make. Grind sesame seeds and peppercorns with a coffee grinder, fry them with coarse salt grains, and put them into a wooden pepper shaker after they become powder. You can use them at any time. Tomato sauce is also available.

The method of making French fries is very simple:

1 Wash and peel the potatoes, cut into strips, 5 mm square. It should not be too thin, otherwise the taste will be poor.

2 Add half a pot of oil into the pot, heat the oil to 80% hot, then add the chopped potato strips. Don't put too many potato strips in, as they will stick together.

Gently use a cooking spatula to turn the potato strips over and over so that they are evenly heated. The heat can be lowered at this time to just keep the oil temperature.

3 After about 4 to 5 minutes, the potato strips will float up after absorbing water in the oil pan, the bubbles in the oil pan will decrease, and the color will turn golden yellow, then you can remove them from the pan.

4 After removing from heat, place on a plate and sprinkle with a small amount of salt. The delicious French fries are ready.

Preparation method:

First peel the potatoes, wash them, cut them into strips, and marinate them in concentrated salt water for 20 minutes. Remove them from the water and set aside.

Mix flour, rice flour and baking powder, add a little water to make a thick paste, and let it ferment for half an hour.

Pour ten liang of raw oil into the pot. Dip the French fries in the batter and put them into the boiling oil. Do not fry them over too strong a fire to avoid them burning. When the French fries turn golden brown, you can pick them up and eat them. Dip them in sauce or salt and pepper for a sweet and delicious taste.

1. Peel the potatoes, cut them into strips and rinse them with water. 2. Drain the moisture on the surface of the potato strips, and when the oil temperature reaches 60% to 70% hot, put in the potato strips (the oil must cover the potato strips). 3. Fry the potato strips for five to six minutes depending on the thickness of the strips. Then remove the strips and drain the oil (you can spread them flat on oil-absorbing paper or a wooden board). 4. After the potato strips have cooled, heat the oil until it is almost boiling, then put the potato strips in and fry them again for three to five minutes (determine the length of time for frying based on personal preference).

Tips: 1. For convenience, you can fry a lot of potato strips for the first time. After cooling, pack them in food bags and freeze them in the refrigerator. When needed, take them out without thawing, and fry them directly in high-temperature oil. It saves time and effort.

2. It is best to choose potatoes with high starch content, or the kind that are "floury". Try to make the cuts as consistent in thickness as possible.

Try this simple approach:

1. Cut potatoes into strips.

2. Fry in 180 degree oil until cooked, remove from the heat, let cool and freeze in the refrigerator overnight.

3. Take out the frozen French fries and fry them in a pan heated to 200 degrees for 5 minutes.

4. Remove from the water, drain the oil, sprinkle with a small amount of salt and black pepper and mix well. Eat with ketchup.
