How to cook pepper fish

Bring some ingredients home after work and cook a good meal. Even if the dishes are not so exquisite, they can still give people a sense of satisfaction. So don’t be lazy if you can cook for yourself. The method of cooking pepper fish is very simple and suitable for those "lazy people". It can also promote health to a certain extent.

1. Buy the grass carp and cut it in half. If there are many people at home, you can cook the whole thing.

2. Slice the fish into butterfly slices. (I have already mentioned the method of filleting fish in the boiled fish recipe I posted before, so I will not repeat it here)

3. Slice off the fish bones.

4. Wash the fish meat and bones, drain the water, put them in two bowls, add a little salt, white wine, pepper, scallion segments and ginger slices, mix evenly with your hands, and marinate for one hour.

5. Prepare bell peppers and peppercorns.

6. Cut the onion into sections, slice the ginger, and crush the garlic.

7. After the fish is marinated, pick out the scallion whites and ginger slices, pour in starch and mix evenly with your hands. Do the same with the fish bones.

8. Slice the green bamboo shoots, blanch them in water and place them in a larger bowl. Also blanch the potato flour and place it in a bowl.

9. Heat the pan and pour in twice as much oil as for cooking. Add half of the Sichuan peppercorns and slowly fry until the peppercorns are fragrant.

10. Add onion, ginger and garlic and stir-fry until fragrant.

11. Add two spoons of boiled fish seasoning and stir-fry over medium-low heat until fragrant.

12. Add boiling water, the amount of boiling water should be according to the basin where the fish is placed.

13. Add white sugar.

14. Pour the fish bones in and cook for two minutes.

15. Turn off the heat and put the fish fillets into the pot one by one and flatten them.

16. After adding all the ingredients, turn on high heat and use a spatula to pour the soup on the fish fillets to cook them. Do not stir the soup, otherwise the fish will break.

17. Cook for two minutes and pour the fish into the vegetable bowl.

18. Add the remaining peppercorns and bell peppers.

19. Pour oil into the pan and heat it.

20. After the oil is heated, scoop a spoonful of oil and pour it on the Sichuan pepper and bell pepper to bring out the spicy aroma. If one spoonful of oil is not enough, add another spoonful.

21. Just put coriander on the surface.

A healthy life is inseparable from a reasonable diet. The preparation of Sichuan pepper fish is actually very simple and the nutrition is also good.
