How to make long beans and eggplant strips

The method of cooking long beans and eggplant strips is very simple, and eating it regularly is also very beneficial to health.

1. Cut the long beans and eggplant into strips of similar length.

2. Soak the long beans and eggplants in different water for a while, rinse them several times with water, and then take them out and drain them.

3. Put some water in the pot, bring the water to a boil over high heat, then add a little oil and salt. Throw the long beans into the water and let them soak for one to two minutes. Then scoop them out, drain them and set them aside for later use.

4. Don't put oil in the pan first. Turn on medium heat and heat the pan until it's slightly hot. Then throw the eggplant strips in and dry-fry them. When they are soft, place them on a plate and set aside. This will save a lot of oil for stir-frying the eggplant later. Why do we do this instead of frying the eggplant directly? It’s because eggplant absorbs too much oil, and eating too much oil is bad for your health.

5. Prepare the ingredients. Cut the red pepper into long strips similar to the beans and eggplant strips, and flatten the garlic cloves.

6. Pour some oil into the pan and heat it until it starts to smoke slightly. Put the eggplant in and stir-fry for two to three minutes. Remove from the pan and place on a plate for later use.

7. Add a little bit of oil to the pan, put the beans in, stir-fry for about two minutes. Now you can push the beans aside, add garlic and chili and stir-fry until fragrant, then put the eggplant in and stir-fry for one to two minutes.

8. Add an appropriate amount of salt, 1 teaspoon of sugar and soy sauce to the pot, stir fry evenly, then add a spoonful of broth (water is fine if there is no broth), cover the pot and simmer over low heat for two to three minutes, then you can serve.

9. The eggplant and beans fried in this way are very pleasing to the eye and delicious.

You can use your imagination and add your favorite ingredients and sauces to create your own creative dish. Cooking is not difficult. As long as you are willing, you will immediately gain confidence even if you are not good at cooking.
