Homemade hamburger buns - Chinese method

1. Put the medium ingredients into the bread machine first.

2. Start the bread machine and knead the dough for 15 minutes.

3. The kneaded dough does not need to be too smooth, just knead it into a ball.

4. Put it directly in the bread machine and ferment until it is 2-2.5 times larger. (Or put it in the refrigerator to ferment for 18 hours. If you choose to ferment in the refrigerator, it is best to ferment it overnight the day before and then make bread the next day)

5. Weigh the butter and cut into small pieces.

6. Separate the egg whites and yolks, take 30g of egg whites to knead the dough, and use the remaining egg liquid to brush the surface later.

7. Pour the main dough ingredients into the bread machine.

8. Tear the fermented seeds into small pieces and add them in.

9. Start the bread machine and knead the dough for 30 minutes.

10. Add butter softened at room temperature.

11. Start the bread machine and continue kneading the dough for 30 minutes.

12. Knead the dough until you can pull out the fascia.

13. Roll the dough into a ball and put it directly back into the bread bucket for fermentation.

14. Fermentation is complete when the dough is twice as large as it was before and a finger dipped in water does not shrink when inserted.

15. Divide the dough into six balls of about 78g in size and knead them into balls.

16. Put it in the oven, put a bowl of hot water underneath to maintain the temperature and humidity inside, and cover the oven door for fermentation. There is no need to turn on the fermentation function of the oven.

17. After it has fermented to twice its original size, take it out of the baking tray and brush the surface with egg liquid. At this time, preheat the oven to 180℃. (Egg yolk liquid should be more yellowish, soft egg liquid should be lighter, both are fine.)

18. Brush with egg liquid and sprinkle with appropriate amount of white sesame seeds.

19. Put it into the preheated oven and bake at 180℃ for about 20 minutes. You can put a cup of water underneath to maintain the humidity in the oven. (When the fermentation is almost done, you can actually cut some tin foil or wax paper to separate each burger bun so that they don’t stick together)

20. When you feel the coloring is almost done, you can cover it with tin foil to avoid over-coloring.

21. Remove from oven and let cool slightly.

22. Cut the dough in half and add the vegetables you want to eat. You can also eat it directly as a lunchbox.

23. Put the filling in and you can eat it.
