Dong'an Chicken Recipe

1.1 Cut ginger into strips and remove the seeds from Sichuan peppercorns, stir-fry until fragrant, then grind them into Sichuan peppercorn powder.

2.2 Take a fresh hen, remove the internal organs and wash it. (It is important to clean it thoroughly otherwise there will be a fishy smell and the soup will be turbid), then put it in the soup pot for about 6 minutes.

3. Let the chicken cool down after it is removed from the soup pot. The taste of the soup pot varies from shop to shop.

4. Cut the chicken into pieces. The most original way to cook Dong'an chicken is to chop it into eight pieces. Now this method has been improved. The result is probably like this. This bowl is a bit old, so don't worry about these details.

5. Heat the pan, add chicken oil, chicken pieces, and some Sichuan peppers. Stir-fry the chicken for a few minutes, add ginger, chili pepper, chili powder, and rice vinegar (rice vinegar and chicken oil are key. Chicken oil is especially fragrant, and rice vinegar is sweet)

6. Add the broth and cook for another 4-5 minutes. Add the chopped red pepper. When the red pepper is cooked, it can be served.
