How to cook river crabs with sauce

There are many ways to prepare river crabs in our daily life. We can choose the preparation method according to our taste, such as steaming river crabs or stewing river crabs with sauce. If we want to make braised river crabs in sauce, we should pay attention to the cleaning of the river crabs and choose fresh river crabs. We should break the river crabs into pieces, braise them in oil, and then add ginger, garlic and other seasonings.

1. Remove the crab's mouthparts and lungs, clean it, and cut it in half lengthwise (as shown in the picture) for later use.

2. Cut the ginger into large slices and set aside.

3. Mix the crabs with a little rice wine and marinate for about 10 minutes.

4. Heat oil in a pan, add ginger slices when it is 60% hot. After the ginger slices change color slightly, add the crabs and stir-fry over high heat until the crab body turns red.

5. Add tomato sauce and stir-fry until slightly red oil comes out.

6. Cook rice wine and add water until the ingredients are covered.

7. After cooking over high heat, add salt, sugar and seasoning.

8. Reduce the heat, cover and simmer for about 10 minutes, then season again until the taste is right.

9. Reduce the heat to high and cook until the sauce thickens. Add a little MSG to enhance the flavor.

10. Add a little water starch to thicken the sauce and serve.

How to cook crab in rice cooker

1. Wash the crabs, chop the green onions and smash the garlic, set aside.

2. Marinate the crabs with cooking wine. When the crabs are drunk, untie the ropes.

3. Heat the pan over high heat, add oil, and sauté chopped green onion and garlic. Add crabs and cover the pot (without adding water).

4. Turn over to the other side after 6-7 minutes and continue to simmer over medium-high heat with the lid on for 7-8 minutes (if the crab is too big and you are worried that it will not be cooked through, you can add a little water to simmer it. I cooked about half a pound each).

5. The whole process takes about 15 minutes (depending on the size of the crab), and the crab will be cooked through. Out of the pot!

Cooking Tips

1. Seafood generally doesn’t contain much salt. As long as it is fresh enough, it will taste absolutely delicious.

2. Crabs contain a lot of water, so you don’t need to add water when cooking them (unless they are very big).

3. The second step above is because the crabs you bought are too fresh, so use cooking wine to make the crabs drunk to avoid accidents.
