How to cook Kyoto spareribs

1. Chop the ribs into small pieces and soak them in clean water for about 25 minutes. Since you don’t blanch them, you need to soak out all the blood. (The ribs should be chopped into smaller pieces. 2. After taking a bath, rinse the ribs, add 1 spoon of cooking wine, 1/2 spoon of salt, mix well, cover with plastic wrap, and marinate for half an hour. (In fact, it tastes better if you marinate it for a longer time. It is recommended to marinate it in the morning and eat it at noon.)

3. Prepare Kyoto sauce: put 1 spoon of white sugar, 1 spoon of balsamic vinegar, 1 spoon of cooking wine, 1 spoon of spicy soy sauce, 1 spoon of tomato sauce and a little salt into a bowl and mix well. (If you don’t have spicy soy sauce, you can use dark soy sauce with a little vinegar and garlic chili sauce)

4. Put 2 spoons of oil in the pan, place the marinated ribs in the pan, and fry slowly over low heat. (Arrange the ribs first, then turn on the fire, because there is marinade on the ribs to avoid splashing the pan)

5. Be sure to fry slowly over low heat, and be patient. If you are really impatient, just use some oil and deep-fry the ribs until cooked.

6. Remember to turn the ribs over halfway through the cooking process. Keep frying until the ribs change color and are cooked through. Then set aside.

7. Use the remaining oil in the pan, turn on medium heat, and fry the minced garlic and sesame seeds until fragrant.

8. Add the pork ribs and stir-fry for about 3 minutes

9. Pour in the prepared sauce and 200ml of boiling water, bring to a boil and simmer for 15 minutes

10. After 15 minutes, cook over medium heat until the soup thickens.
