Chop the vegetables into small pieces and put them into a bowl. Then add the minced ginger, chopped shrimp, minced meat and eggs into the bowl. Add cooking wine, salt, dark soy sauce and fresh soy sauce. Put on disposable film gloves and knead it like you would knead dough. 7. Start making wontons. Take a piece of wonton wrapper and place it on the palm of your hand (the wonton wrapper here is trapezoidal), put the short side in front, and put an appropriate amount of stuffing in the middle. Bring the short side together with the long side, leaving a distance of about 1 cm. Then, with your thumbs on top and index fingers on the bottom, pinch the two corners together with the palms facing each other to align them in the middle. Gently pinch them to bring the two corners together. (If it doesn't stick, you can dip it in water) 8. Finally, cook the wontons. By the way, let me also tell you the steps of cooking wontons. Boil a pot of water, and when the water boils, put the wontons in (not too many wontons, as there should be plenty of water). Immediately after putting the wontons in the pot, use the back of a spatula to push them upwards along the edge of the pot to prevent the wontons from sticking to the pot. Then cover the pot and bring to a boil, then push again with a spatula. Cover with lid and continue cooking to prevent overflow. You can also switch to medium heat. Cook until all the wontons float on the water and serve. 9. Use a slotted spoon to serve. You can eat it with or without soup according to your preference.
