Tomato and egg sauce noodles

1. Use a knife to make a cross on the top of the tomato, then soak it in boiling water for five minutes, peel off the skin and dice it for later use.

2. Beat the eggs into egg liquid, heat oil in a pan, pour the egg liquid into the oil when it is 70% hot, stir in one direction with chopsticks, fry the egg flowers and set aside

3. Chop the coriander and green onion, dilute the bean paste with water and set aside

4. Add some oil to the pan and stir-fry the chopped green onion. Add the diced tomatoes and stir-fry until they become a paste. Then add the eggs and the prepared bean paste. Stir well and set aside.

5. Cook a bowl of noodles and mix with appropriate amount of tomato, egg sauce and coriander.
