6. When the oil starts to seep out and the lamb becomes dry and dark, add 2 cups of water. Once boiling, lower the heat. Add salt, cover and simmer for at least half an hour.

7. When the water has been absorbed, add the final 2 cups of water and the diced potatoes and cook for another hour, or until the lamb is fork-tender.

8. Eat the cooked mutton with the thick soup and rice.
