Steaming fresh dates for preservation

Steamed fresh dates are made by steaming the red dates for consumption, but the steamed red dates are difficult to preserve, so you should not steam too many red dates to avoid spoilage. If you don’t finish eating the steamed dates, you can put them in the refrigerator to keep them fresh. However, the shelf life in the refrigerator is not very long. It is better to eat them as soon as possible. If they are left for a long time, they will deteriorate.

After the red dates are steamed, put them in a fresh-keeping bag and refrigerate.

Steamed Red Dates

Ingredients: 500g dried red dates

Accessories: Half a bowl of flour

1. Put the red dates in an oil-free bowl.

2. Sprinkle a handful of flour on the surface of the red dates.

3. Add appropriate amount of water and rinse clean.

4. Put it into the steamer and bring to a boil over high heat, then steam for another 5 minutes.

5. After taking out of the pot, let it cool down. Turn it over twice while cooling down to prevent moisture from staying between the red dates, which will make the skin less crispy!

6. After the red dates have cooled down (there is no moisture on the surface), put them into a sealed bag and you can eat them at will without worrying about the presence of soil.

1How to preserve fresh dates: Sand storage

Choose storable varieties, harvest when they are just beginning to half red, pick undamaged dates, choose a cool and humid place, spread 3 cm thick wet sand on the bottom layer, put a layer of fresh dates (the thickness of one date) on top, then put another layer of sand, then the second layer of dates, then sand again, and the third layer of dates, and pile it up to 30 cm high. To prevent the sand from drying out, clean water can be sprayed on the surface to replenish moisture. This method can store the dates for more than a month, and the dates will be fresh, crisp and sweet with little nutritional loss.

2 How to preserve fresh dates: Freezing

To preserve fresh dates, you must first choose a good date for picking them. Pick them when the red fruits are more than 25% colored. Dates at this stage are most durable in storage. After choosing the picking date, the next step is to select the fruit variety. Generally speaking, late-ripening varieties are more resistant to storage. It is best to choose winter jujubes such as Zhanhua winter jujubes, Daxue jujubes, Jiuyueqing, etc. The picked fresh dates need to be selected, and the bad dates with bruises, black spots and worms on the surface should be picked out to prevent the bad dates with mold from infecting other dates during storage and affecting storage. Fresh dates are generally preserved by refrigeration. Before refrigeration, the pre-stored fresh dates should be pre-cooled at 5-8℃ for one or two days. Before precooling, soak the fresh dates in a 2% calcium chloride solution for 30 minutes. After pre-cooling, the fresh dates should be stored in a cold storage with a temperature of 0℃~1℃ and a relative humidity of 90%~95%.

3 How to preserve fresh dates: Refrigerate

The general method of preservation at home is to use a refrigerator. Pick out the winter dates that are not completely red, seal them in a plastic bag, leave a small amount of air in the bag, then seal it and refrigerate it in a refrigerator at a temperature of 0℃-4℃. However, it is recommended to pack it in small bags when packing in plastic bags, so that you only need to open a small bag at a time and eat it, so it can be preserved longer.
