1. Italian pine nut vegetable salad

Ingredients: 1 wolf tooth lettuce, 1 red leaf lettuce, 1 carrot, 1 celery stalk, 3 cherry tomatoes, 30g cooked pine nuts, 20ml Italian balsamic vinegar, 30ml olive oil, 1/2 teaspoon (3g) dried thyme, 1/2 teaspoon (3g) white sugar, 1 teaspoon (5g) salt, 1/2 teaspoon (3g) black pepper. Method: 1. Wash all the vegetables, drain the lettuce, cut the cherry tomatoes in half, and cut the carrots and celery stalks into thin slices using a food processor. Take out and soak them in cold water for later use. 2. Mix balsamic vinegar, olive oil, dried thyme, sugar, salt and black pepper, put them into a food processor, and use the blending function to mix them thoroughly to make balsamic vinegar sauce. 3. Mix the lettuce, cherry tomato slices, carrot slices and celery slices evenly, pour in balsamic vinegar sauce and sprinkle with cooked pine nuts.

Tips : Italian balsamic vinegar is a common sauce in Western dishes. It is made from fruits and is naturally free of pigmentation.

2. Method 2

Ingredients: 1/2 head of lettuce, 1 tomato, 6 okra, some onion rings, 6 baby corns, 6 small carrots, 5 black olives, some whole-wheat croutons, some almond slices, 1/2 cup of Italian salad dressing, a pinch of salt. Preparation (1) Wash and drain the vegetables, cut them into pieces and set aside. (2) Use heated water and a little salt to blanch okra and baby corn. When cooked, remove from the water and soak in cold water. After cooling, drain and set aside. (3) Tear the lettuce into small pieces by hand and put them in a bowl. Top with tomato slices, okra, baby corn, and onion rings in order, then pour Italian salad dressing on top. Finally, sprinkle with whole wheat bread cubes, almond slices, and black olives (sliced) before serving.
