1. First, mix the high-gluten flour, malt extract and lemon juice into a dough, then add salt and natural yeast and stir until the surface is smooth and elastic, then pull the mask open. Put it in a bowl and ferment for 3 to 4 hours. Fold the dough in half and roll it into a ball every 40 to 60 minutes (because the dough is very soft, it will flatten after fermenting for about 40 minutes, so it needs to be folded in half and rolled into a ball every 40 to 60 minutes). Ferment until the dough is about 1.5 times larger than the original size. If you want to make the air holes of the bread bigger, put it in the refrigerator and ferment for 12 to 24 hours. If not, divide it into shapes.

2.1 Shape the dough into a cylindrical shape and place it on a high temperature cloth sprinkled with powder.

3.2 Take out the dough that has been refrigerated and proofed. If the dough is a little hard, let it proof for about 2 to 3 hours at 30℃. Divide the dough into 300g pieces. Do not knead the dough too hard.

4.1 Ferment at 30℃ for about 90 minutes (there is not much difference between the fermented dough and the unfermented dough, just a little bit bigger)

5.2 Fold the high temperature cloth into a track shape

6. Make cuts on the surface of the bread. The dough is too sticky, so put some water on the knife when making cuts.

7. Spray water and bake in the oven at 230℃ for about 20 minutes, then remove the high temperature and lower the temperature to 150℃ and bake for about 15 minutes. (Bake at a lower temperature to make the bread crispy)
