How to make marble chiffon

1. Mix egg yolk and fine sugar evenly

2. Add milk and corn oil and mix well

3. Add 70g low flour

4. Mix evenly into egg yolk paste

5. Divide the batter into two equal parts

6. Add 10 grams of low flour to one portion and 10 grams of unsweetened cocoa powder to the other portion

7. Stir evenly with a spatula until there is no dry powder

8. Add a few drops of lemon juice to the egg whites and beat until they are coarse foams. Add the mixture of granulated sugar and corn starch and continue beating until dry foams form.

9. Divide the meringue into two parts, and use a spatula to mix them into the original flavor and cocoa batter respectively. Use the spatula to cut and turn with your right hand, and turn the bowl counterclockwise with your left hand quickly, as fast and gently as possible to avoid defoaming.

10. Mix until the batter is smooth

12. Squeeze into the mold crosswise and stir with chopsticks

13. Knock the mold a few times to shake out the big bubbles

14. Preheat the oven, the bottom layer, upper fire 150 degrees, lower fire 140 degrees for 55 minutes, upper fire 160 degrees for 5 minutes to evaporate the moisture on the surface) After taking it out, drop it from 20cm in the air and immediately turn it upside down to cool
