How to make Cantonese-style assorted mooncakes

Now that people’s lives are better, they have become more careful about what they eat. In the past, people ate to fill their stomachs. Nowadays people eat it to prolong their life. So, how can we use "eating" to prolong our life? You still have to achieve it by yourself. Now, I will introduce the method of making Cantonese assorted mooncakes.

1. Making the crust: Mix peanut oil and alkaline water evenly. Sift the low-gluten flour and make it into a powder wall, then add the peanut alkali water mixture and syrup

2.1 Making the filling: Put cooked flour, soft sugar, white oil, walnut kernels, pine nuts, sesame paste, crushed rock sugar, green silk and red silk together.

3.2 Mix well until it is ductile, relax for two hours, and set aside

4.1 Add appropriate amount of low-gluten flour to the relaxed leather to adjust the hardness

5.2 Mix well and set aside

6.1 Divide the filling into 100g pieces for later use

7.2 Divide the skin into 25g pieces for later use

8. Wrap the divided fillings into the pie crust separately

9. Then use the mold to emboss 8

10. Place 9 on a baking tray, then bake in the oven at 230/210℃. Brush the surface with egg yolk liquid after it is set.

11. Bake at 210/190℃ until the surface is golden brown.
