How to make mushroom salt-baked chicken

1. Wash and chop a fresh three-yellow chicken, about two pounds. Remember to cut the skin on the chicken's neck and remove the tumor inside, or discard that part of the skin. Cut the ginger into thin slices.

2. Soak the mushrooms in water, wash them twice and drain them, then cut them into small pieces.

3. Take a 25g packet of salt-baked chicken powder and pour it into the chicken. Add an appropriate amount of salt. Note that there is already some salt in the salt-baked chicken powder. Add some cornstarch, peanut oil, and light soy sauce, mix well, then add the mushrooms and mix, marinate for about 10 minutes.

4. Heat the pan, add about 10 grams of peanut oil, then put the chicken in the pan and turn it over slightly.

5. Then cover with lid and bake over medium heat for 3 minutes.

6. Then open the lid and use a spatula to turn the chicken over to prevent it from sticking to the bottom and to ensure that it is heated evenly.

7. Continue to cover the lid and bake on medium-low heat for 5 minutes. Open it, turn it over and continue baking for 3 minutes. When you see that the chicken is constantly releasing oil, it is cooked.

8. This baked chicken does not produce any smoke, so you don’t need to use too high a fire. Just bake it over a slow fire until cooked.
