1.300 grams of flour. Using the newly bought kitchen scale, I no longer have to make rough estimates.

2.1 Dissolve the yeast in warm water, pour it into the flour, stir it into flocs, and then knead it into dough. I kneaded it for a full ten minutes and the dough was very delicate and not sticky at all.

3.2 There is also a special small measuring spoon for yeast, 3 grams.

4.12 Pour hot water into the pot and let the dough rise.

5.21 While the dough is resting, process the radishes.

6.1 Add appropriate amount of salt to kill the spiciness and pour out the water.

7.2 Use a plane to rub it into shreds. Be careful. I threw away the little bit that my fingernails couldn't pinch. It was so scary.

8.1 Pour appropriate amount of cooking wine.

9.2 Add the chopped meat.

10. Pour in the chopped garlic leaves.

11. Stir well and set aside.

12. After two hours, the dough has risen and there are many pores when it is pulled apart.

13. Knead the dough to squeeze out the air and divide it into pieces of appropriate size.

14. Use a rolling pin to roll it thinly. The rolling pin from Shanxi is very useful. This is my second time using it and I’m still a little unfamiliar with it.

15. Pack more stuffing. The shredded radish has been squeezed when it was pickled, so there is not much juice and it is easy to pack.

16. Place the buns with the folded side facing downwards.

17. Pinch two small pieces of black sesame dough, flatten them, make them round on the top and flat on the bottom, and dip them in some water to make panda ears. Take two black raisins of even size and place them diagonally and symmetrically to serve as eyes. (The raisins faded a bit after steaming. I should have used black sesame flour earlier.)

18. After everything is done, let it rest for 10 minutes, steam it for 10 minutes, and simmer for 5 minutes. That's it.
