When frying fruits, how should the dough be prepared?

Ingredients 1: 300g flour, 180g water, 5g yeast, 20g sugar, Ingredients 2: 1g edible alkali, 5g salt, 15ML warm water

1. Mix all ingredients 1, knead into dough, and let it ferment in a warm place for about 1 hour until it doubles in size.

2. Mix all ingredients 2 and knead them into the fermented dough little by little until they are thoroughly mixed.

3. Continue to ferment for about 1 hour until it doubles in size.

4. Apply a layer of oil on the chopping board and your hands, because the dough is very soft and easy to stick.

5. Spread the dough into long strips and cut into strips of about 3 cm. The gaps between the dough pieces will shrink automatically.

6. Stack the two dough pieces together and press them in the middle with chopsticks.

7. Heat the oil to about 70% hot, twist the noodles and put them into the pan, turning them over and frying until golden brown. After taking them out of the pan, put them on kitchen paper to absorb excess oil.

Tips

1. You can use ordinary flour or high-gluten flour for flour.

2. Alkali can also be replaced by baking soda, also 1 gram

3. The amount of Chinese food is not as precise as that of Western food. For example, the ratio of flour to water including yeast. I referred to two recipes and used a compromise amount.

4. Because I used a very small pot and was afraid that I couldn't open it, I didn't stack two pieces of dough together. Instead, I pressed the middle of one piece of dough with chopsticks. Normally two pieces.

5. Don’t fry for too long. When the surface turns golden brown, you can take it out of the pan.
