Bring the water to a boil over high heat, add the spareribs, and cook over medium heat for 30 minutes until the spareribs are 80% cooked. Remove from the heat and drain. 3. Heat the oil in a wok over medium heat. When the oil is 50% hot, add the fermented black beans, sliced scallions and ginger and stir-fry until fragrant. Add the cooking wine, tangerine peel, sugar and dark soy sauce and stir-fry until fragrant. Add the boiled spare ribs and chopped chili peppers, stir-fry evenly, add pepper and salt and mix well. Turn off the heat and let the fried ribs marinate for 5 minutes to make the ribs more flavorful. 4. Wash the pumpkin with water, cut it in half, remove the pulp and place it on a plate. 5.
