Tomato sauce ribs, it's easier this way

Spare ribs are the most delicious part of pork. Not only is the meat tender, but there are also many ways to cook them. So have you ever eaten spare ribs with tomato sauce? The sweet and sour taste of tomatoes paired with the tenderness of the ribs makes you hungry just thinking about it. Now I will teach you how to make this delicious tomato sauce ribs.

Tomato sauce spare ribs is a dish made of ribs with tomatoes, rock sugar and tomato sauce, which is delicious in color, aroma and taste. This dish has a sweet and sour taste and is rich in nutrients such as protein and vitamin C. It is especially suitable for children and the elderly who do not like to eat. practice

1. Cut the tomato into a cross shape and set aside; slice the garlic, wash the ginger and cut it into shreds, and do not discard the uneven edges of the ginger, set aside;

2. Bring a pot of water to a boil, put the tomatoes in the boiling water and let them boil for about 1 minute, then take them out without throwing away the water; 3. Put the ribs and the "corners" of ginger into the boiling water, take them out after 5 minutes, rinse off the foam and drain;

3. Peel the skin of the tomatoes and cut into pieces; put the ribs into a large bowl, add 1 spoon of cooking wine, 1/2 spoon of soy sauce, 1/2 spoon of vinegar, a little pepper, and marinate for 10 minutes;

4. Pour oil into the pot, add rock sugar, turn on the heat and stir-fry until the rock sugar is almost melted, then turn off the heat and use the remaining heat to stir-fry the sugar color;

5. When the sugar is completely melted into syrup, add the pork ribs and stir-fry evenly - do not turn on the fire at this time, use the residual heat;

6. Add tomatoes, shredded ginger and garlic slices, and stir-fry for 2 minutes;

7. Add water to cover the ingredients, add 2 tablespoons of tomato sauce, bring to a boil and then turn to low heat. Simmer until the soup is thick, add salt to taste, add 2 more spoons of tomato sauce and a little sesame seeds, stir fry evenly, then turn to high heat to reduce the sauce and serve.

Precautions

1. Tomatoes are boiled to make it easier to peel them, and the boiled water can be reused to blanch the ribs. The uneven parts of ginger are often cut off and thrown away, but they can be fully utilized when blanching meat to remove the fishy smell, so you won't feel sorry to throw them away after blanching.

2. Be sure to drain the ribs after rinsing them (or use a paper towel to absorb the water). It is best to turn off the heat when putting them into the pot to coat them with sugar, and use the residual heat to avoid oil or sugar splashing on the skin.

3. Tomato sauce must be added twice. Adding it once before serving will make the taste richer, otherwise it will affect the taste of the finished product.
