   Wash and peel the potatoes

   Deep fry potatoes in oil until cooked through, then drain on dark soy sauce and plate.

   In a separate pan, heat oil and sugar, then add the sugar and stir constantly and quickly.

   Stir-fry the potatoes until they bubble and are cooked through.

   Spread a layer of oil-coated potatoes evenly on the bottom of the plate before plating.
