There are many ways to cook noodles, including fried noodles, soup noodles, stir-fried noodles, etc. It is also very common to use mushrooms to make noodles, such as mushroom and shredded chicken noodles. The combination of shiitake mushrooms and chicken is also very good. The soup after stewing the two can be poured into the noodles, which is very delicious.

In winter, a bowl of hot mushroom and shredded chicken noodles can not only increase appetite, but also improve the body's resistance and keep colds away. The specific cooking steps are as follows:

1. Soak the mushrooms stems downward in clean water for 20 minutes to allow impurities to fall off naturally, then rinse and cut into strips.

2. Blanch the mushrooms in boiling water for about 2 minutes, then remove and drain.

3. Cut the chicken breast into shreds and place in a container. Add cooking wine and starch, mix well and set aside. Slice the garlic and chop the green onions.

4. Heat oil in a pan, add garlic slices when it is 70% hot and sauté until fragrant. Add shredded chicken and stir-fry until it changes color, then add shredded mushrooms.

5. Add oyster sauce, straw mushroom soy sauce, sugar and salt and stir-fry over high heat. Pour in boiling water to cover the ingredients by about 2 fingers, turn to medium-low heat and simmer for 15 minutes until the soup is fragrant.

6. Take another soup pot, fill it with 2/3 of water, add the noodles after the water boils, then remove from the pot and put it in a bowl, add the boiled mushroom and shredded chicken soup, and sprinkle with chopped green onions.

To make a delicious bowl of mushroom and shredded chicken noodles, you also need to pay attention to the fact that the shredded chicken must not be dry, the mushroom flavor must be rich, the noodle soup must be fresh, the noodles must be smooth, and the flavors must be distinct and integrated layer by layer. If you do all this, you can safely enjoy a bowl of warm mushroom and shredded chicken noodles in early winter. In fact, it is not difficult at all. Just leave it to the heat and simmer it till it reaches the right temperature.
