How to make bitter melon fried pig ears

6. Take out immediately, cool with cold water and drain

7. Heat the oil in the pan until it is 70% hot, add shredded ginger and chili peppers, stir-fry until fragrant, add bitter melon, add a little salt, and stir-fry over high heat

8. Pour in the waxed pig ears and add sugar

9. Continue to stir fry for about 1 minute, add chicken essence to season and serve.

10. Bitter melon is not bitter, and cured pig ears are delicious
