Yangzhou fried rice (simple version)

1. Prepare cold rice and chopped green onions.

2. Chop all the ingredients into small pieces and set aside. Soak the mushrooms in water for a few minutes in advance.

3. Wash the dried shrimps, squeeze out the water and set aside.

4. Prepare all the ingredients and beat the eggs with appropriate amount of salt.

5. Put oil in the pan and stir-fry the green beans and corn for two minutes, then add carrots, ham and diced mushrooms and stir-fry together. Add a little water and cook until all the vegetables are cooked and the moisture is just dried up. Add appropriate amount of salt to taste.

6. When the water is almost dry, add the dried shrimps and stir-fry for a while, then remove from the pan and put into a container for later use.

7. Add more oil to the pan and fry the eggs. Scoop the eggs into small pieces.

8. When the eggs are almost solidified, put the rice in, use a spatula to break up the rice grains, and stir-fry the rice and eggs evenly. Add appropriate amount of salt to adjust the rice to the appropriate taste.

9. Crush all the rice grains and stir-fry for a while. Add all previously sautéed vegetables and fry together.

10. Finally, put all the ingredients in and stir-fry together. After about two minutes, add the chopped green onions.

11. Serve! Finished product picture.
