1. Prepare the raw materials: 2 tomatoes and 250 grams of enoki mushrooms.

2. Rub the tomato skin with a small amount of salt, rinse it with clean water and cut it into 1 cm small pieces.

3. Cut off the heads of the enoki mushrooms, spread them out and rinse them with clean water.

4. Heat oil in a pan and stir-fry tomatoes over medium heat for 30 seconds.

5. Add a small amount of salt and stir-fry for 30 seconds. (Medium heat)

6. Pour in clean water and simmer for 10 minutes.

7. After ten minutes, the tomatoes will be fully juiced and stewed.

8. Use chopsticks to pick out the tomato skin.

9. Continue simmering for 5 minutes until soft.

10. Pour in the washed enoki mushrooms and add appropriate amount of water. Simmer for 8 minutes. If you don’t like too much soup, cook it a little longer to make it thicker. It’s delicious when mixed with rice or noodles!
