How to make snapper fillet in tomato sauce

4. Add two spoons of tomato sauce, two spoons of sugar, half a spoon of salt, one spoon of light soy sauce, one spoon of balsamic vinegar and appropriate amount of water to make a bowl of sauce and set aside.

5. Coat the marinated fish strips in dry starch so that the fish strips are evenly covered with starch, then shake them to shake off excess starch.

6. Put some oil in the pan. When the oil is about 70% to 80% hot, put the snapper strips into the pan one by one and fry them slowly over low heat until the strips turn yellow.

7. Take out all the fried fish strips and drain off excess fat.

8. Turn the heat to medium. When the oil temperature rises to 90% hot, pour all the fried fish strips into the oil and fry them again. The fish strips will be crispier. It will take about one minute to fry them.

9. Leave a little oil in the wok, pour the sauce in after the oil is hot, simmer the sauce over low heat, stirring constantly while simmering to avoid sticking to the pan. After the sauce boils, thicken it with water starch.

10. Pour the fish strips into the sauce and stir-fry for a few times to make sure each fish strip is evenly coated with the tomato sauce.

11. Use a toothpick to cut the green onion leaves into thin strips and soak them in cold water and they will curl up.

12. Place the fish strips on a plate and decorate the plate with green onion leaves.
