Buttermilk Country Bread Recipe

1. Prepare buttermilk: Add lemon juice (I used apple cider vinegar instead) to milk, mix well and let it sit for 10 minutes. The milk will become flocculent or clumpy.

2.12 Pour buttermilk, water, olive oil, sugar and eggs into a larger container in order and mix well. Mix about 60 grams of flour with baking soda and salt, then sift into the above mixture. After mixing well, add yeast, stir, and leave it open for 15 minutes.

3.21 Sift in about 30 grams of flour each time, stir evenly and repeat the process. If you sift in too much flour at once, it will easily form lumps. When the dough becomes difficult to mix, switch to kneading by hand. If the container you start with isn't big enough, try working on a cutting board instead.

4. The amount of flour used is not fixed. It is good as long as the dough is kneaded until the surface is relatively smooth and a little sticky. Pour a little olive oil along the edge of the bowl and turn the dough over so that its surface is coated with oil, making it easy to take out after it has risen. Cover with plastic wrap and let rise until doubled in size.

5. Transfer the dough to a floured board, pat it to remove any air, and shape it into a rectangle with the short side about the same length as the mold. Roll it up from one side along the long axis. I sprinkled raisins on it before rolling, but you don’t have to. It is best to gently push the two ends towards the middle while rolling, otherwise it will easily be longer than the mold.

6. Pinch the joint with your fingers and place it face down in the mold. If you are worried about not being able to take it out after baking, you can wipe the mold with a paper towel dipped in a little olive oil, or use spray oil. Cover with plastic wrap and let rise until doubled in size. If the dough is damp, it will stick to the plastic wrap after it has risen, so I usually just put it in the oven to rise.

7. Place it in the lower layer of the oven, select lower heating, 180 degrees, 20 minutes. This step will vary greatly depending on the size and power of your oven. The bread is done when the surface is evenly colored and a knife or bamboo stick inserted into it comes out clean. Remove from the pan and place on a rack to cool.
