1.1 Heat oil in a pan and sauté ginger and goose. (Just a little bit of oil will do)

2.2 Wash the goose and drain the water for later use.

3.1 Add appropriate amount of water to cover 2/3 of the goose, add dark soy sauce, light soy sauce, oyster sauce, salt, brown sugar and plum sauce for seasoning, boil over high heat and simmer over medium heat for about 40 minutes.

4.2 Fry over high heat until both sides are golden brown. A lot of goose fat will drip out and you can pour some of it out.

5. Turn the goose over during the stewing process so that it can be evenly flavored.

6. When the goose is tender (chopsticks can be easily pierced through), simmer over high heat until the sauce thickens. Taste and season appropriately. Remove the goose from the heat and drain the sauce. Set aside the sauce for later use.

7. After the goose has cooled down a bit, cut it into pieces and place it on a plate, then drizzle the sauce over it. (If it’s cold, you can heat it in the microwave for one minute)
