How to make bitter melon and pork

1. Prepare the raw materials, cut the pork belly into slices, and cut the bitter gourd into slices diagonally

2. Put the bitter gourd into boiling water with a small amount of salt and oil and blanch it.

3. Add a small amount of oil to the pan and add the sliced ​​pork belly.

4. Stir-fry slowly until most of the fat in the pork belly is fried out and the surface is slightly yellow.

5. Add the prepared star anise and other spices and continue to stir-fry for a few more times

6. Pour in an appropriate amount of boiling water, add dark soy sauce and cooking wine

7. Add ginger slices, scallion segments, garlic, red pepper and rock sugar.

8. Cover and cook for 10 minutes

9. After ten minutes, open the lid and add the blanched bitter melon cubes

10. Cover and cook for another five minutes.

11. Open the lid again and cook over high heat until the sauce thickens. You can then take out the spices.

12. When the juice is almost collected, add salt and pepper to taste

13. Remove from the pan and serve
