1. Prepare carrots, red wine, ginger, garlic, chili and bean paste for later use

2.1 Pour a small amount of oil, heat the pan with ginger slices and garlic, stir-fry until fragrant, then pour in the blanched duck meat

3.2 Put the duck meat in boiling water for 5 minutes to remove the fishy smell, then take it out and blanch it for later use

4.1 After the water is dried, stir-fry over high heat until the duck meat turns slightly yellow, pour in a small amount of red wine and stir-fry until dry. You can also use white wine, cooking wine, etc.

5.2 Stir-fry the duck meat over high heat until fragrant, add half a bowl of water, cover the pot and simmer.

6. Stir-fry the duck until it smells like wine, then remove it and set aside. Leave the oil in the pan and add chili peppers, bean paste, ginger slices and garlic to stir-fry until fragrant.

7. Pour the fried duck in and stir fry evenly.

8. Add carrots and stir-fry until cooked, then add a small amount of salt and soy sauce and serve.

9. The fragrant spicy duck is ready
