For foodies, hot pot is of course their favorite way of eating. However, when eating hot pot, it is mainly about choosing different ingredients according to personal taste. More importantly, there are certain rules for the order in which each hot pot ingredient should be served. This will allow the hot pot to taste better and avoid the consequence of uncooked food. Today I will explain the order of serving various ingredients in hot pot.

There is a certain order in which to put the dishes in hot pot, and foodies should know this

1. Meat and bones Some pot bases contain meat and bones, but I usually order some bone dishes when eating hot pot, especially in winter. Put the bones in first, such as pork bones, and the bottom of the pot will bubble up and the hot pot will become a pot of bone soup, which adds nutrition~

2. You have been craving for fatty beef, fatty mutton, marbled beef and other meats for a long time. After finally waiting for the pot to boil, what are you waiting for? The meat slices that are cut as thin as a cicada's wing are rolled up, dipped in the pot, and then served with sesame paste, peanut butter, hot sauce, fermented black beans, etc. It is really a great enjoyment in life!!! A few years ago, beef hot pot from Chaoshan area also became popular in Shanghai, among which shacha sauce is a major feature. It feels great to eat hot pot with shacha sauce.

3. Mushrooms: Enoki mushrooms, shiitake mushrooms, straw mushrooms, coprinus comatus...all kinds of mushrooms can be put into the pot after the meat is cooked! Because some mushrooms need to be cooked for a longer time, like the mushroom hotpot in Yunnan, it must be cooked for a certain amount of time to completely remove the poison. The longer you cook it, the fresher the soup base will be.

4. Potatoes, tofu, potatoes, yam, sweet potatoes, etc. These vegetables have a common feature that is, they have a high starch content. If they are put into the pot too early, they will easily stick to the bottom of the pot. Therefore, stir them more after putting them into the pot, and take them out quickly when they are soft, otherwise they will not be able to be taken out.

5. Green leafy vegetables Vegetables absorb oil, so they are added at the end. After eating a lot of "hard dishes", it's time to eat some refreshing vegetables to refresh your taste!

6. Noodles, rice noodles, etc. Men always seem to feel that hot pot is not enough for them - they always feel that hot pot is not a proper "meal". In addition to eating it with rice, you can also cook some noodles or vermicelli, which are also good to eat as a staple food.

Our most common order: meat (meat balls), vegetables (fungi), noodles (rice noodles). So, as far as I understand it, why do people eat this way? There are two points: First, people are very hungry before eating, so what do they want to eat the most? 80% of people definitely want to eat meat the most, so they cook the meat first. When they have almost finished the meat and feel sick of it, they will cook some vegetables or mushrooms to relieve the greasiness. If they are still not full at the end of the meal, they may cook some staple food. Second, I think 80% of people have encountered this: when the meal is almost finished, someone will say, "Eat all the meat and there are only leftover vegetables," or "Eat the expensive ones so it's not too wasteful."

This is in terms of taste and economy, but it is not actually true from a health perspective. The correct order should be vegetarian first and meat later. I remember seeing this on Yangshengtang before. Hotpot usually feels numbing, spicy and hot, so it is common to drink some soup or beverage before eating to warm up the stomach.

Most people put the meat first when eating hot pot, but this is not good. If you eat meat first, you will not only feel full quickly, because meat is acidic and will increase the burden on the stomach, but if you eat too much fat at once, you will also gain a lot of fat. So when eating hot pot, you can eat vegetables and fungi first. This is a healthy and reasonable combination.
