5. Cut the carrots into dice.

6. Heat the pan with cold oil. When the oil is 40% hot, add the scallion and ginger slices and stir-fry until fragrant. Then add the soaked tea tree mushrooms (squeeze dry) and stir-fry for about one minute. Remove from the pan and set aside. In another pan, pour in oil and add the marinated chicken wings. Fry until both sides are golden brown. Add cooking wine and carrots. Stir-fry until the carrots are slightly darker in color. Then add the fried tea tree mushrooms and salt. Stir-fry for a few times and serve.
