How to make fried stuffed four treasures

1. Wash the bitter gourd and cut it into several pieces. Use a small mold to dig out the core of each piece.

2.12 Cut the eggplant diagonally from one end, but do not cut it through, then cut it in two places to separate it. After cutting, soak in clean water for 20 minutes.

3.21 Remove the stems of the peppers, cut a knife in the middle to take out the seeds and rinse them clean.

4. Rinse the tofu carefully with water, then divide it into 4 equal parts.

5. Wash the meat, cut it into small pieces and then mince it. Cut three scallions into shreds and mix them into the meat, then continue chopping. After it is ready, use a little bit of cornstarch, soy sauce, sesame oil, peanut oil and salt and mix them evenly with chopsticks.

6.1 Take a piece of tofu and use the tip of chopsticks to carefully poke some small holes in the middle of it, then stuff the meat into it. Be careful not to break the tofu.

7.2 Use chopsticks to stuff the chopped meat filling into the bitter gourd, eggplant and peppers. After the peppers are stuffed with meat, use a small toothpick to hold them down to prevent the filling from falling out.

8. The next step is to fry. Add a little oil in a hot pan and put the bitter gourd, which is not easy to cook, in and fry one end on low heat for 5 minutes, then switch to fry the other end of the bitter gourd.

9. In this way, fry several kinds of vegetables and tofu in turn and put them on the plate first. If you steam it, you can just put it in the steamer and eat it.

10. I usually cook it in a casserole because it tastes more fragrant. Take a casserole and put a few slices of cabbage in the bottom first, because the cabbage will release sweet juice after cooking, which will make it taste better when mixed with other dishes.

11. Then put the stuffed vegetables into the casserole. Then put salt and light soy sauce in a small bowl, add water and evenly pour it on the vegetables in the casserole. Bring to a boil over high heat, then simmer over low heat for 10 minutes.
