7.2 In another pot, pour the stirred egg liquid into the pot and fry it on medium-low heat until it becomes a pancake. It should not be too hard or too cooked. If it is still soft and tender, remove it and cut it into strips or small pieces (salt needs to be added to the egg liquid and beaten evenly. After beating evenly, the MSG-like umami flavor will come out)

8. Add soy sauce, salad oil, sugar, rice wine and a small amount of water and stir-fry until the sauce is thickened.

9. Finally, add the bean sprouts and stir-fry quickly.

10. Turn off the heat and remove from the pan when the sprouts begin to release a little water but still remain crispy.
