1.1 Wash the chicken, drain, chop into pieces, and marinate with 10 grams of soy sauce for ten minutes

2.2 Wash the mushrooms, squeeze out the water, remove the stems, and slice; beat the eggs

3. Put the pan on the fire, add peanut oil and heat it until it is 70% hot, put in the chicken pieces with egg liquid, fry until golden brown, pour into a colander to drain the oil

4. Put the pan on the fire, leave a little oil, add sugar and fried chicken cubes and fry briefly

5. Add soy sauce, cooking wine, sweet bean paste, scallions, ginger, and minced garlic, simmer briefly, pour into a casserole, add chicken broth, boil over high heat, skim off the foam, and simmer over low heat until crispy; place the casserole on low heat, add the mushrooms, and simmer for about 15 minutes.
