Garlic Braised Tripe Strips

1. Clean the pig stomach first.

2. Boil water in a pot, add some cooking wine, green onions, ginger and peppercorns (I forgot to add them when taking the picture), and after the water boils, put in the pork belly and blanch it for about a few minutes.

3. Take out the blanched pork belly and remove the oil and white hard shell on it. Add clean water to the pot, add cooking wine, green onions, ginger and peppercorns, put the pig's stomach in, turn down the heat after the water boils, and cook for about 1 and a half hours.

4. While the pork tripe is cooking, you can prepare the garlic.

5. Cut the cooked pork belly into thick strips.

6. Filter the soup from cooking the pork tripe and set aside.

7. Add appropriate amount of oil to the pot. When the oil is hot, put the garlic in and some peppercorns. Fry on low heat until the aroma comes out and the garlic turns golden brown.

8. Add chopped green onion and ginger.

9. Stir-fry for a while, add the tripe strips and stir-fry, and add cooking wine, salt, light soy sauce and pepper.

10. Pour in the soup used to cook the pork strips.

11.Cook until the belly strips are submerged.

12. After the water boils, simmer on medium-low heat for about 20 minutes. Before removing from the heat, pour in a small bowl of starch water to thicken the sauce, then add chicken essence for seasoning. When serving, add some chopped green onions.
