1. Make the sauce first and set aside: smash the garlic and mince it, cut the ginger into minced ginger, put them all in a small bowl, add pepper powder (if you don't have pepper powder, put a pinch of pepper and remove it when frying oil, just use pepper oil), then heat the oil and pour it into the bowl, fry the seasoning in the bowl until fragrant

3.2 After it has cooled slightly, add soy sauce, vinegar, sugar and sesame oil. Crush the cooked sesame seeds with a rolling pin (for better taste) and put them into the seasoning bowl. The sauce can be used after it cools down.

4.1 Pick and wash the leeks in advance, soak them in clean water for a while, then blanch them in boiling water until they change color (the time should be short, just enough to change color), take them out and rinse them with cold water, then take them out and squeeze out the water

5.2 Brush a layer of oil in the frying pan, then pour in the egg liquid and cut into thin pancakes. You can fry two pieces. After frying, take them out and let them cool.

6. Cut the cooled egg skin into thin strips as thick as leeks. Don’t cut it too thin, as it will not taste good or look good.

7. Cut the chives into 3.5 cm long segments and put them into the bowl with the egg skin shreds.

8. Pour the sauce you just made into the mixture, add the appropriate amount of salt and mix well.
