1. Wash the pork belly and pork shank, and cut into pieces.

2. Prepare star anise, cinnamon, cooking wine, onion and ginger.

3. Wash and peel the yam, then cut into dice.

4. Put the yam into the oil pan and fry until golden brown, then remove and set aside.

5.Blanche the meat, remove from the water and drain.

6. Add a small amount of oil to the pan and stir-fry the blanched meat.

7. Add onion, ginger, star anise, cinnamon and chili, and continue stir-frying until fragrant and the meat turns slightly yellow.

8. Add rock sugar, turn to low heat and stir-fry until the sugar turns brown.

9. Add cooking wine and soy sauce and stir-fry evenly.

10. Add boiling water to cover the meat, bring to a boil over high heat, then simmer over low heat for 40 minutes.

11. Add salt and fried yam, and simmer for another 30 minutes.

12. Turn to medium heat and cook until the soup is concentrated.
