How to make Matcha Cream Cake Roll

4. Mix the low-gluten flour, matcha powder and baking powder evenly.

5. Sift into the egg yolk.

6. Stir evenly and do not stir for too long to avoid the flour from forming gluten.

7. Add a little tartar powder and 30 grams of sugar to the egg white.

8. Beat with an electric whisk until thick and add the remaining 30 grams of sugar.

9. Continue beating until wet foam is formed, that is, the tip of the egg white brought out by the whisk becomes a curved hook shape.

10. Take 1/3 of the egg white paste and add it into the matcha egg yolk paste.

11. Stir well and then add the remaining egg white paste.

12. Stir evenly.

13. Preheat the oven to 180 degrees, line the baking tray with tin foil in advance, pour the mixed batter into the baking tray and scrape the surface flat.

14. Stir twice to remove the bubbles, then place in the middle layer and bake for 20 minutes.

15. After baking, take out the baking tray and cover it with the baking net.

16. Turn the whole thing over.

17. Remove the baking tray.

18. Then gently peel off the tin foil.

19. Put the tin foil back on and turn the cake over.

20. Gently remove the baking rack and let the cake cool.

21. Add 15 grams of sugar to the whipped cream.

22. Beat with an electric whisk and set aside.

23. Spread the whipped cream evenly on the cake.

24. Use a rolling pin to roll up the tin foil in the opposite direction and push the cake to roll up.

25. Wrap the rolled cake roll with tin foil and refrigerate for at least one hour.

26. Take out, cut into pieces and eat.
