1 lion head goose (6000g), 750g soy sauce, 250g fat pork, 100g refined salt, 120g galangal (80g ginger can be used instead), 50g rock sugar, 90g rice wine (50g liquor can be used instead), 10g Sichuan pepper, 10g cinnamon, 5g cloves, 50g coriander, 10g star anise, 10g licorice, 10g salad oil, 50g garlic, about 5kg water, 50g lemongrass

Production steps:

1. Open the goose and remove the internal organs, wash and dry, rub 100 grams of refined salt on the goose body and put a bamboo chopstick in the abdominal cavity; fry Sichuan peppercorns in a pan until fragrant, put them in a sanitary gauze together with galangal (ginger), star anise, cinnamon, licorice, and cloves, wrap them into a ball, put them in a brine basin, add soy sauce, color oil, rock sugar, galangal, lemongrass, and rice wine (white wine), cut the fat pork into pieces with a knife and put them in, then add clean water and boil the brine over medium heat;

Put garlic, coriander and galangal into the belly of the goose (remove them when cooked), then put the goose into the braising liquid and cook for about 1 hour and 30 minutes (lift the goose out of the soup and put it down again, repeat four times). Turn the goose over several times to let it absorb the flavors, then remove it and let it dry for later use. Put the cooked braised goose on a chopping board, cut it into thick slices, pour the braising liquid on it to make it moist. When serving, serve with 2 dishes of garlic vinegar.
