How to make oil-free German-style milk puff pastry

12. Roll it into a ball again, cover it with plastic wrap or a wet cotton cloth that has been wrung out and let it sit for 10 minutes.

13. While the pan is resting, cover the inner wall of the mold with baking paper.

14. Roll the dough into a square with the same length as the mold (here it is 15cm)

15. Put it into the mold and spray water on the surface for secondary fermentation (40 degrees for 20 minutes)

17. The oven can be preheated to 190 degrees for 10 minutes. Spread the lemon curd you made earlier on the dough (don’t be afraid of too much)

19. Put all the low-gluten flour, Parmesan cheese, sugar and egg liquid for the milk crisp into a bowl

20. Use a spatula to cut and mix to make distinct milk crisps

21. Sprinkle on top

22. Preheat the oven to 190 degrees, bake at 190 degrees for 23 minutes, remove from the mold, and tear off the baking paper

23. You can sprinkle some sugar on it for decoration, it’s up to you. DONE~
